Lux Aeterna/Agnus Dei/Enigma Variation 9 (Nimrod) by E. Elgar
Má Vlast by B. Smetana
Waltz no. 2 by D. Shostakovitch

Update! I've posted to the YouTube page with the most recent discovery I was able to make thanks to my limited ability to perceive Italian lyrics, search engine gold. The song from 2:56 - 5:16 is "Io Le Canto Per Te" by Florent Pagny.

I would now like to identify the mystery instrumentals that come directly before and after the Pagny song (00:39 - 02:56 and 05:16 - 08:26).
